If you’re looking for a versatile dip recipe to have on hand, look no further. This creamy black bean dip would be a delicious appetizer, taco night condiment, or healthy snack to keep on hand for the week ahead. It’s even kid friendly! I recommend serving it warm with a side of veggie sticks and whole grain chips, but it’s delicious chilled too.

It only takes a few ingredients to make this creamy black bean dip come to life, but the dollop of cream cheese at the end makes it truly decadent. Any kind of cream cheese will work here, even dairy-free alternatives. Or of course, you could leave it out if you like!

7 Ingredient Creamy Black Bean Dip

Serves 6

  • 2 cans black beans, rinsed and drained
  • 2 Tablespoon olive oil
  • ½ cup diced red onion
  • 1 large garlic clove
  • 2 teaspoons cumin
  • 2 oz. plain cream cheese
  • 1 lime, juiced
  • Salt and pepper, to taste
  • Toppings of choice: diced tomato, cilantro, diced jalapeno, diced red onion, lime wedges

In a medium saucepan, heat the olive oil over medium heat. Add the red onion and sauté for a few minutes. Add the garlic and sauté until fragrant, about 1 minute. Add the cumin, salt and pepper. Add the black beans and ¾ cup water and bring to a simmer. Simmer for 10 minutes, or until the beans have softened the mixture has thickened. Remove the beans from the heat. Using an immersion blender, lightly puree, leaving some of the beans whole (you could also transfer ⅔ of the beans to a blender or food processor and pulse). Stir in the lime juice and cream cheese. Transfer to a bowl and top with toppings of choice! Serve with whole grain chips and veggie slices.
