What’s red and green that’s a festive holiday treat? Pomegranate guacamole on sweet potato toasts! Guacamole gets into the holiday spirit with the addition of crunchy and slightly tart, yet sweet, pomegranate seeds. Served on a low-carb alternative to crackers or bread, this festive pomegranate guacamole on sweet potato toasts is a delicious party appetizer that will please a crowd!

Traditionally, guacamole is served classic style with chips. In this recipe, we’re giving it a festive twist with a few healthy swaps. The addition of pomegranate seeds is unexpected, yet surprisingly addictive with a little pop of tartness in each bite. Instead of chips, this pomegranate guacamole is served on roasted sweet potato toasts for a low-carb, nutrient-rich alternative.

Festive Pomegranate Guacamole on Sweet Potato Toasts 

Serves 8

  • 2 avocados, mashed
  • 1/3 cup pomegranate seeds
  • 1/4 cup cilantro, chopped
  • 2 Tablespoons red onion, diced
  • 1 small garlic clove, minced
  • 1/2 lime, juiced
  • salt to taste
  • 2 sweet potatoes, sliced into 1/4” thick rounds

Preheat the oven to 425 degrees.

Place the roasted sweet potato rounds on a parchment-lined baking sheet. Roast for about 15-20 minutes or until fork tender and slightly golden brown. Set aside.

To make the guacamole, add all of the ingredients to a mixing bowl and mix to combine.

To serve, top the sweet potato rounds with a spoonful of guacamole. Garnish with extra pomegranate seeds and cilantro.
