Superfood Homemade Granola Bars Recipe

Homemade treats are usually going to be the healthier choice when comparing them to anything that might come wrapped in a package from the store. Not only do you know exactly what is going into your body when making foods at home, but you can customize the ingredients to suit your taste buds!

These homemade granola bars are super simple to make and would be a fantastic snack for kids or as a pre-workout fuel. If it were up to me, I would even make a double batch and keep extra on hand in the freezer to grab and go.

Think of these bars as your healthier, superfood version of Rice Krispy treats. They are kid and adult approved!

Here’s what you need to make them:

  • 1 1/2 cups puffed cereal
  • 1 1/2 cups rolled oats
  • 1/2 cup unsweetened coconut flakes
  • 1/3 cup dried goji berries (could substitute for other dried fruit or additional coconut flakes)
  • 1/4 cup chia seeds (could substitute hemp seeds for additional protein!)
  • 2/3 cup brown rice syrup
  • 1/3 cup almond butter (or any other kind of nut/seed butter)

Directions:

Add the brown rice syrup and almond butter to a large microwave-safe bowl and microwave on high for about 1 minute to melt the brown rice syrup and almond butter. You could also do this in a small saucepan on low heat and transfer to a large mixing bowl. Add the puffed cereal, oats, coconut flakes, goji berries (or dried fruit) and chia seeds.

Line a square baking dish with parchment paper and pour the granola mixture into the pan. Push the mixture into the pan with a spatula, creating an even layer. To ensure the mixture is packed together, press it down with your hands, making sure your hands are slightly damp to prevent the mixture from sticking.

Place the bars in the refrigerator for at least 30 minutes to firm up a bit. To cut the granola bars, hold either side of the parchment paper to remove the mixture from the dish. Use a pizza cutter to cut nine even squares. You can store these in the refrigerator for up to a week or in the freezer for a few months.
